Gluten Free Pancakes – No Baking Powder or Gums!

These pancakes are amazingly fluffy and awesome. I can't even believe it has no baking powder, baking soda or gums! These are a favorite in my house!
Ingredients

1 Cup White Rice Flour

1 1/2 Tablespoon Tapioca Flour

1/4 to 1/2 Teaspoon Sea Salt to taste

2 Eggs

1 Tablespoon Coconut Oil

1 Tablespoon Pure Maple Syrup

1 Cup Rice Milk

Mixing it Up~
  • Place all dry ingredients into one bowl (white flour, tapioca flour and salt).
  • Separate egg yolks from egg whites.
  • Set egg whites aside.
  • Mix egg yolks, rice milk, coconut oil, and maple syrup together and then mix into dry ingredients and set aside.
  • Get an electric hand mixer and blend eggs whites on medium to high speed until foamy and peaks form.
Frying Time!

Get your frying pan ready and heated. I use a thin layer of  coconut oil in my frying pan. Once it is heated and ready to go, slowly and gently fold in ABOUT HALF ONLY of your whipped egg whites into the pancake batter and start making your pancakes. When you have used about half your pancake batter, add in the other half of the whipped egg whites. This helps to have all the pancakes be fluffy!
