Vegan Gluten Free Buckwheat Pancakes

So here is another version of yummy Vegan Gluten Free Buckwheat Pancakes.  These are Vegan and Gluten Free...no eggs and no dairy!  These are so easy to make. A big bonus is that they work well while cooking.  I remember getting so frustrated when making gluten free pancakes because they would never turn out well...harder to flip for some reason. But these are great and Buckwheat is highly nutritious and energizing. I tend to makes these on sports mornings for fuel that lasts— here's why...

♥  Good Fiber - 5 grams in 1 Cup Groats

Vegan Gluten Free Buckwheat Pancakes

2 Cups Buckwheat
1 Bananna
2 Cups Coconut Milk
+1-3 Tablespoons Coconut Milk as Needed
1 Flax Egg - 1 Tablespoon Flax Meal + 3 Tablespoons Water
1 Tsp Vanilla
1 Tsp Cinnamon
1/2 Tsp Salt
1 1/2 Tsp Baking Powder
1-2 Tablespoons Maple Syrup
2 Tablespoons Coconut Oil

Mix all dry ingredients together. Mix Flax Egg and set aside. Heat coconut oil until liquid and set aside. Blend banana and other wet ingredients together. Mix all wet into dry ingredients.  Add 1-2 tablespoons of coconut milk to desired pancake mix thickness.  The trick to getting a frying pan to be "non stick" is to make sure it is hot  prior to starting. Heat pan on high and once hot reduce to medium heat. Use some oil to just coat the bottom of the pan. Use an oil that is meant for high heat.
